Pumpkin Curry (Wattakka Curry)

Ingredients:

500 Grams Pumpkin (peel the skin & cut into cubes)

1 Cup Coconut (freshly scraped or grated)

6 Clove Garlic (chopped)

1 1/2 Teaspoon Cumin

1 1/2 Teaspoon Curry powder

1 Teaspoon Turmeric

1 1/2 Teaspoon Black Pepper (coarse)

10 Medium Curry Leaves

1 Medium Green Chili (optional)

1 1/2 Teaspoon Black Mustard Seeds (coarse)

1 Teaspoon Salt (to taste)

1 Tablespoon Oil

2 Cup Water

Directions:

Step 1
Mix cumin, garlic, Curry powder, turmeric, Black Pepper, scraped Coconut & crush/grind them by using mortar & petal or a electrical grinder.

Step 2
Put this mixture into a medium size sauce pan then add pumpkin & mix well all together.

Step 3
Place this sauce pan in medium heat stove & cook for 3 minutes by stirring often. Then add water & mix again & cook for further
10 minutes until pumpkin get tender.

Step 4
Then add salt to your taste & mix well. Turn off the heat & set a side the sauce pan.

Step 5
In a large sauce pan heat the oil to a frying level, then add Black Mustard Seeds, Green Chili & Curry Leaves. Fry them 3-4 minutes & make sure
they are not burn by stirring very often.

Step 6
Then pour the pumpkin over this fried mixture & mix them all together. Serve hot with steamed rice.
