Ingredients:
- 250 Grams Sugar (Grind or use Caster Sugar)
- 250 Grams Flour
- 250 Grams Butter (At room temperature)
- 4 Eggs
- 2 Teaspoon Vanilla Essence
- 2 Teaspoon Baking Powder
- 2 Tablespoon Milk
Directions:
Preheat the oven to 180 C and Lightly grease a baking tin with melted butter and line it with grease-proof paper. Sieve the flour and mix in the baking powder until well combined.
Add the butter and sugar in to a large mixing bowl and combine roughly with a spatula. Then using a hand mixer beat it for a minute on a low speed. Scrape down the sides of the mixing bowl time to time. Then increase the speed to high and beat for another 5 minutes until the sugar dissolves. The mixture should look pale and fluffy now.
Add egg 1 at a time and beat each time for a minute to make sure the egg is well combined. Scrape down the sides of the mixing bowl time to time. Now after another 4 minutes, all the eggs should be well combined in to the batter. Then mix in the vanilla essence and beat for and extra minute. Now fold in the flour using a spatula, then add milk and mix well.
Now pour the batter into the prepared baking tray. Place the tray in the middle position of the oven & bake for 40 minutes. Test the cake with a toothpick (or with a cake tester). The cake is done when the inserted toothpick comes out clean.
Take out of the oven and leave it to cool down on a wire rack for about 15 minutes before serve. Enjoy !
