Sri Lankan Mutton Curry (එලු මස් කරි)

Ingredients:
For Marinate The Mutton
900 Grams Mutton (cut into cubes)

3 Teaspoon Salt

2 Teaspoon Black pepper (crushed)

1 Teaspoon Turmeric powder

2 Tablespoon Chilli powder

2 Tablespoon Curry powder

2 Tablespoon Vinegar

For Preparing Mutton Curry
3 Tablespoon Oil

1 Sprig Curry leaves

1 Teaspoon Cumin seeds

1 Teaspoon Mustard seeds

1 Teaspoon Coriander seeds

1 Small Cinnamon stick

5 Small Cloves

4 Small Cardamom pods

2 Tablespoon Garlic (Chopped)

1 Tablespoon Ginger (Chopped)

2 Small Onion (Chopped)

2 Medium Green chilli (Sliced)

1 Small Lemongrass stick

1 1/2 Cup Coconut milk

Directions:
Marinate The Mutton

Step 1
Put mutton in a large mixing bowl. Then add salt, black pepper, turmeric, chilli powder, curry powder and vinegar mix well all together. Let it marinate for about 15 minutes.

To Make The Curry

Heat oil in a sauce pan for about 2 minutes in medium heat when oil is hot add curry leaves, cumin seeds, mustard seeds, coriander seeds, cinnamon stick, cloves, cardomom pods, garlic, ginger, onion and green chilli into the pan and fry it for about 3 minutes.

Step 3
Then add marinate mutton into the sauce pan mix well. Fry mutton for about 3 minutes and add lemongrass followed by another gentle stir. Fry it for further 10 more minutes while stirring regularly.

Step 4
Add coconut milk into the sauce pan & give it a gentle stir, keep cooking further 15 more minutes until the curry get thicker while stirring regularly.

Step 5
When curry is thick enough turn off the heat, add more salt to your taste if you want. Serve hot with rice or bread, enjoy!

Recipe Note: Keep the heat at medium level from start to end
