Egg bhurjee


For 1 person you will need:-

Egg - 2 nos
Onion - 1 medium, chopped
Chilli powder - 1/2 tsp
Tumeric powder - a pinch
Coriander leaves - little, chopped
Salt to taste
Oil 2 tbsp

Method

Heat oil in a pan, add onion and saute it. DO NOT SAUTE ONION TO GOLDEN. Saute it for 10 seconds not more than that.







Now add chilli powder, salt, tumeric powder and mix it well for 5 seconds.





Put coriander leaves and mix it for 2 seconds.




Add eggs and scramble it nicely. Just remember the thattukada chefs who make so much noise to scramble the kothu paratha. Just do like it. Scramble it nicely under medium flame for a minute.




Yummy yummy egg bhurjee is ready...
